Historically, the 3 salmonellae infections in poultry causing severe economic losses are Salmonella pullorum , S gallinarum , and S arizonae . Through the institution of control programs, the incidence of infections with these salmonellae has decreased dramatically. In addition to the above salmonellae, S paratyphoid infections in poultry are relatively common and have public health significance because of the consumption of contaminated poultry products.
S pullorum and S gallinarum are highly host-adapted to chickens and turkeys. S arizonae is most important in turkeys, with chickens occasionally affected. There are ~2,000 nonhost-adapted species (paratyphoid) that may be transmitted to almost all animals (see also salmonellosis, Salmonellosis: Introduction).
